Production
'Cuvée de Pâques' is made from Stéphane's youngest vines averaging 25 years old. Only natural yeasts are used during the three week fermention, added sulphur is kept to a minimum (just a single application of 3g/hl) and the wine undergoes a light filtration before ageing in concrete vats. Bottling takes place close to Easter ('Pâques'), usually in the April after harvest.
Tasting notes
With a little air this charcaterful wine opens up to reveal ripe blackberry fruit and robust, herby flavours with a clean, balancing freshness on the finish. Honest earthy Loire Cabernet Franc perfect with a lunch of charcuterie and artisan cheese.
