The Waterkloof range (which currently consists of just a Sauvignon Blanc), epitomises the estate’s goal of producing truly fine, “world-class” wines. The wine is made from two exposed blocks at the top of the Schapenberg and is only made in excellent vintages. Unusually for Sauvignon Blanc, it is a wine capable of ageing for many years. Production

Waterkloof Sauvignon Blanc was born on the southwest-facing, low-yielding and windswept slopes of Schapenberg (overlooking False Bay). Here the blustery southeaster (and sometimes the northwest wind as well) churns up the vineyards with regularity. This not only allows for a very low crop, but the flavours intensify to a flinty minerality. Waterkloof use organic and biodynamic methods and adhere to Old World, sustainable practices in our vineyards to ensure that the vines are nourished and in balance. Their soils are free of chemicals and are kept healthy by using plant extracts, fungi and bacteria from our own organic compost. The two single vineyards are about four kilometers from the sea and are planted at a height of between 270 and 300 meters above sea level. The soils are of sandstone origin with medium sized stones, helping with drainage while retaining the ability to hold moisture. The vineyards are 18 years old. Production was approximately 3 tons/ha. The flagship Waterkloof range, which currently consists of only one wine, epitomises their decade-long goal of producing honest, inimitable and truly fine wines. Waterkloof Sauvignon Blanc hails from two adjoining blocks at the top of this windswept, biodynamic farm. The cool, south-facing blocks are 350m above sea-level and just 2 miles from The Atlantic Ocean. These factors combine to produce extremely low yields (1-2 tonnes/hectare) of balanced grapes that transform into wine imbued with a character that transcends the grape variety from which it is made. Defined more by a special place, this is a fine wine which just happens to be made of Sauvignon Blanc. Grapes are hand-harvested and brought to the cellar by horses for hand-sorting. Whole-bunch pressing then takes place in a basket press for the finest juice. Fermentation takes place spontaneously in old 600 litre barrels with wild yeast and the wine then spends approximately 12 months on the lees before bottling. No additions other than sulphur. Vegan friendly, organic and biodynamic wine. 6-8 barrels are made and the wine is released only in exceptional vintages. It is capable of ageing for many years.

Tasting notes

The ultimate expression of Sauvignon Blanc from South Africa sourced from the unique terroir of Waterkloof. A steely and mineral Sauvignon Blanc with great purity, restraint and elegance. Flavours of green pepper dominate the nose. The palate is layered with masses of fine texture and a balanced acidity, ending with a lingering minerality. This is a hugely serious wine with real pedigree and amongst one of the finest examples of South African's huge potential with this variety.

Great with seafood, crab and crayfish; and dishes with chilli, lime and coriander.
