Production
The white is a blend of Chenin Blanc 50%, Viognier 20% and 10% Grenache Blanc with Semillon, Verdelho and Roussanne, all mountain grown fruit from estate vineyards, mainly Stellenbosch with small parcels from Swartland, Franschhoek and Paarl. The grapes are picked as early as possible and rushed to the cellar where depending on the varietal they are either crushed and destemmed or transferred directly into a tiny manually operated basket press to be process whole bunch. All varietals are fermented wild and matured in a combination of French barrique and 400 litre barrels( 25% new). Full malolactic fermentation takes place and the blend made after 9 months on the fermentation lees without stirring. The wine undergoes a coarse filtration before bottling.
Tasting notes
Clean, bright and posh, positively packed with rich, fresh stone fruit, white spice and a fine, pithy minerality that keeps on giving with a core of stoney acidity and a relentless finish.

Fresh crayfish, sole meunier, simply grilled and salted turbot.
