The Carricante and Catarratto grapes are grown on poor volcanic soil at an altitude of around 700m, where there is good temperature variation between day and night. The fruit is hand harvested well into October. The carefully selected grapes are cold macerated for 24 hours and, after destemming, are pressed softly. The juice is left to ferment at a controlled temperature of 15-18°C for approximately 20-25 days. bottled in January after the vintage following a short maturation in tonneaux.

Tasting notes

Fresh and intense aromas of pear and white flower with light herbal notes. This white has layers of complexity - an appealing texture and mineral character from the volcanic soil, and hints of citrus and stone fruit on the long and elegant finish.

Food match

Ideal as an aperitif or accompaniment to seafood, sushi, fried fish and vegetable tempura.
