Production
Selected parcels of Riesling vines, averaging over 35 years of age, grow on limestone, granite and gravel soils. Traditional vinification with fermentation in stainless steel tanks at a temperature of 19°C. Michel prefers to vinify a dry style Riesling which allows the true expression of this variety, which was first recorded in Alsace in 1477.
Tasting notes
Very pale green in colour. Highly aromatic, with notes of citrus, grapefruit and hints of fennel tops and fresh almonds. The taste is quite full, fruity and long, with added complexity from the old vines and delightful tension from steely acidity.
Food match
Pairs with many foods, particularly those with Thai or Chineses spices. Great with sushi and Maki. Also works well with goose or duck dishes, and richly flavoured risottos.
