Production
Selected parcels of Riesling vines, averaging over 45 years of age, grow on limestone, granite and gravel soils. Traditional vinification with fermentation in stainless steel tanks at a temperature of 19°C. The Cave have always aimed to produce a drier style of Riesling which results in a very pure expression of this variety grown in Alsace since the 1400s.
Tasting notes
Highly aromatic with notes of ripe citrus and stone fruit on the nose with classic but subtle Riesling petrol notes. Full-flavoured and initially sweetly fruity on the palate evolving into something deliciously dry and moreish. Old vine fruit gives complexity, depth and a long finish with well-balanced racey acidity.
Food match
Pairs with many foods, particularly those with Thai or Chineses spices. Great with sushi and Maki. Also works well with goose or duck dishes, and richly flavoured risottos.
