Production
Sourced from selected vineyard parcels on the best terroirs of Crozes-Hermitage, with stony granite soil. Destemming followed by maceration in vats (stainless steel or wood) and cuvasion lasting up to 30 days at controlled temperature (30°C) with regular remontage (pumping over) and pigeage to extract measured amount of tannins, colour and roundness. Regular tasting before ecoulage (transfer of juice before pressing) for the malolactic fermentation in barrel. Matured for 15 months in 400 litre French oak barrels of 1st or 2nd fill.
Tasting notes
Powerful yet elegant; the lovely dark ripe bramble fruit is balanced by sleek oak and supple tannins. Definitely a step up from standard Crozes.
Food match
Serve with red meat such roast as lamb or duck, as well as hard cheese.
