Production

Fermented on solids and rested in not quite full, seasoned French barriques (15-20% ullage) for about 18 months. Blended with 8% 2021 Dunk, in what is their first composition from something of an infant Solera system in the making. Bottled without filtration. Fermented on gross Lees, though wild yeast, under controlled temperature. Racked to used barriques with fine Lees, and rested on 15/20% ullage for over 12 months, without any S02 addition. The final composition has an addition of 8% percent 2021 Sauvignon Dunk. This small portion has been made as described, however has the impact of more time in newer oak. Sulphur has been added prior to bottling. The wine is bottled at the point that all notes, flavours, smells, anything you like related to Sauvignon Blanc have disappeared. There is no flor, just a naturally furry crust!

Tasting notes

A powerful aromatic profile with roots in both fruit expression and winemaking. Thoughts of Pina Colada transition from an idea to inescapable, and fragrant honey is ever-present. The palate is no less robust, with fresh Lemon acidity, racing in defence of balance.

Food match

A perfect companion to a thick slice of Comté. Anything fatty but especially Pork fatty!
