Harvested from isolated sites that are chosen for their consistent performance and ability to produce the highest calibre fruit on the Pyren site. 40% whole bunch, 3 week maceration, in 2 & 3 tonne open fermenters, 20% new oak, 80% older (1,2,3,4 yo 500L barrels) for 12 months
Tasting notes
Aromatic, structured, savoury and extremely finessed. Mulberries, crushed raspberries and a hint of pink peppercorns.
