Production
Grapes are sourced from Oltrepo Pavese in the province of Pavia, Lombardy. The vines grow in hillside vineyards at an altitude of 200 to 400m, in a climate with hot summers and cold winters and 600-900mm of rainfall per year. The grapes are typically harvested at the end of August, or towards the start of September. After soft pressing, the cooled must is fermented in stainless steel tanks at 18-20º C, and remains for a further three months in stainless steel before bottling.
