Production
This Albariño Pét-nat is made with the méthode ancestrale. A fully naturally made sparkling wine bottled before primary fermentation is finished, without the addition of secondary yeasts, sugars or preservatives. Indigenous yeasts are vital and give a unique character to this vibrant wine. Pájaros Pintados literally translates to "Painted Birds". This phrase most notably refers to the Uruguay River, which is poetically and historically known as the Río de los Pájaros Pintados ("River of the Painted Birds")
Tasting notes
Delicate floral aromas alongside notes of white peach, green apple and ripe pear and a subtle saline minerality. Its gentle natural sparkle and medium-bodied palate give the wine a creamy, lightly textured feel, while crisp acidity keeps everything bright, dry and wonderfully refreshing. The finish is clean and savoury, with lingering orchard fruit and a chalky mineral edge.

Wonderfully food-friendly, perfect alongside fresh seafood, especially oysters, grilled prawns or ceviche, where its saline lift and citrusy freshness beautifully complement delicate flavours from the sea. It also pairs with soft cheeses, vegetable tempura, herb-led salads and Mediterranean small plates. For something heartier, try it with sushi, roast chicken with lemon and herbs, or creamy risottos, where the wine’s lively acidity cuts through richness.
