Production
Grapes were picked in the cool of the night and crushed immediately into stainless steel fermenters for 7-10 days. After pressing off skins, the wine was then matured in new and older French oak hogsheads for 12 months prior to bottling and release.
Tasting notes
Classic varietal notes of cedar and tomato leaf, aromas of blackcurrant and menthol. A palate of cassis and liquorice is followed by mouth filling tannins, providing great length whilst carrying the blue fruits and subtle cigar box notes.
Food match
This wine is a superb accompaniment to beef, rich game dishes or a good cheddar cheese.
