Production
Bobal is grown in loam plaines that are rich in red clay and miocence conglomerates. It ripens later than other varieties with young vines often used to make light fruity reds and rosé. Pasión de Bobal is the result of a careful selection of the best grapes from south-east Spain's indigenous Bobal variety located in Camporrobles within the D.O. Utiel-Requena region. Fruit yields are controlled in order to keep the natural ecosystem of the environment and organic practices are also employed, harsh chemicals avoided. Maceration of the grapes at very low temperature for 16 hours, in which the free run juice is obtained, which will be fermented later at controlled temperature.
Tasting notes
Pale, 'Provence-style' pink in colour with crisp red berry fruit. Nicely-balanced with clean, bright acidity, some minerality adding palate weight and a dry, fresh finish.
Food match
A stand alone aperitif and perfect with salmon or grilled chicken salad.
