Bobal is grown in loam plaines that are rich in red clay and miocence conglomerates. It ripens later than other varieties with young vines often used to make light fruity reds and rosé. Fruit yields are controlled in order to keep the natural ecosystem of the environment and organic practices are also employed, harsh chemicals avoided. Maceration of the grapes at very low temperature for 16 hours, in which the free run juice is obtained, which will be fermented later at controlled temperature.
Pale, 'Provence-style' pink in colour with fresh strawberry, redcurrant and white flower aromas with a hint of rose. Nicely-balanced with clean, bright acidity, some minerality adding palate weight, and red berries and cream on the finish.
A stand alone aperitif or perfect for salmon or chicken salad.
