Production
Handpicked, dry farmed organically grown grapes with nothing added -macerated on skins for 4 days in open vats and spontaneously fermented. The wine was stored for 6 weeks in 3 amphorae with different porosity. The wine is bottled unfined and unfiltered.
Tasting notes
A thick-skinned, small-berried regional oddity, this is really quite unique. Intriguing and complex aromas of Seville orange and rose petal with savoury, slightly nutty notes. Structured and assertive on the palate, the initial tannic grip soon gives way to a ripe, textural palate with compelling minerality, dried apricot and citrus peel flavours and an appetisingly tangy finish.
Food match
A great companion for marinated poultry dishes and stews or a lamb and apricot tagine.
