Handpicked dry farmed organically grown grapes with nothing added - 4 weeks on skins in 2000L old oak with wild yeast fermentation. After 11 months in the barrel the wine is bottled unfined and unfiltered and kept back a further 2 months before release.
Supple muscularity behind opulent and juicy black cherry, damson and tobacco notes. A goodbackbone of acidity provides structure, while gentle tannins ensure the wine is perfectly approachable in its youth.
Really versatile - easy to envisage a meal comprising several courses, and this wine complimenting all of them from starter to dessert via cheese board!
