Production
From a single vineyard, grapes are hand-picked when at full ripeness then gently pressed and cold settled in stainless steel tanks, the pressing juices are separated in to free run and pressings, this allows for better integration for the future wine. The two juices are then racked together for fermentation in stainless steel tanks at 14°C on average to naturally achieve 4.5g r/s
