Production
At harvest-time the weather is marked by lower rainfall and southerly winds - leading to a natural concentration of sugar in the Hondarrabi Zerratia grapes. They are transported to the winery in 15kg crates. The must is transferred to fine-grained French oak casks from the Allary Tonnellerie. It undergoes a long, cold fermentation before being racked and stored for around 7 months on its lees in stainless steel.
Tasting notes
A substantial white with ripe citrus aromas and light notes of brioche from a period spent in oak. The palate has peach and apricot fruit, and well-integrated oak gives a broad mouthfeel with lightly toasted, savoury and saline characters. The finish is long and persistent.
