Most of the grapes area harvested around the Franschhoek valley. Hand picked in the early morning. It was then softly pressed to tank and settled for 2 days, then racked to a fermentation tank. After fermentation the wine stays on its fine lees for 5 months until bottling.
Fresh lime citrus nose, lightly herbal with touches of green pepper and lemon grass. Green apple and bergamot lime on the palate with cleansing acidity and a nice streak of minerality on the finish.
Peri Peri chicken or asparagus and lemon risotto .
