Production
The vineyards are situated in the heart of the Corse Sartène appellation in the south of Corsica on slopes just inland from the coast which benefit from cooling sea breezes and a cooler mountain climate, preserving the freshness of the Vermentino. The soil is granitic and the vines are tended manually and organically. A basket press is used to produce the juice and the fermentation is controlled at a temperature of 16-18°C lasting for just over two weeks.
Tasting notes
Typically fresh and aromatic Vermentino with scents of fennel, slight herbal notes and lemon balm. Elegant and lush, ripe apricot fruit with a wonderful balance and minerality followed by a pleasingly pithy, long finish. Bright, flavoursome and very satisfying.
