Production
Produced from 5 hectares of Argilo-Calcaire, Kimmeridgian and Portlandian soils only a few kilometres away from Chablis, this wine shares many characteristics with its prestigious neighbour. Vinification takes place entirely in thermo regulated steel tanks, with pneumatic pressing and the use of static clarification. The wine will age for 3-5 years if desired.
Tasting notes
Fresh with a hint of brioche on the nose. Lusciously textured with a Chablis-like chalky and mineral aspect, fleshed out with some floral and ripe stone fruit.
Food match
If you can make it last longer than aperitf time, this will pair beautifully with grilled scallops, seafood and chicken in creamy sauces or grilled spring vegetables.
