Production
The fruit comes from 50-year-old vines and the winemaking story is one of less is more… The wine is fermented and aged in new oak foudres but with minimal toast, with no filtering, no added sulphites and no racking this is essentially left alone for its formative years.
Tasting notes
Rich and expressive with pretty ripe yellow stone fruits and white flowers with some Chardonnay weight on the palate, complemented by subtle oak and a beautiful freshness. This is great example of a natural wine.
Food match
As an apéritif, with fish tartare or sashimi, plateaux des fruits de mer, or creamy shellfish-filled vol au vents.
