Second fermentation in the bottle for at least 24 months followed by a further 6 months in bottle before release.
Maturation
75% in stainless steel and up to 25% in barrel for 6 months: three quarters of which were 2nd or 3rd French oak 300l barrels.
Tasting notes
Nicely autoloytic without ever getting too heavy, bright acidity keeps the palate cleansed.
