Wild yeasts, aged on lees for 12 months, aged in mostly old oak with just one or two new barrels thrown into the mix.
Maturation
75% in stainless steel and up to 25% in barrel for 6 months: three quarters of which were 2nd or 3rd French oak 300l barrels.
Tasting notes
A definite nod to Burgundy in shape and texture, clever use of old oak means that the brightness is beautifully balanced with a seam of richness.
