Production
10 year old Chenin grown on a tiny 0.4ha north facing plot of gravel and clay. Fermented and aged in a single 1000l sandstone jar to highlight and retain the purity of fruit with just a touch of micro-oxygenation.
Tasting notes
An unfurling palate of aniseed - definitely one to decant and dont serve too cold - it will reward a slow paced evening as the wine opens and develops. The tarragon thread is always present and is complemented by a rich mouth feel.
Food match
White meats or fish in a rich creamy sauce would work here, throw in a few tarragon leaves in to bring out the aniseed heart of the wine.
