2014 Production
Natural yeast with maceration in concrete vats. No fining and minimal sulphur additions.
Maturation
75% in stainless steel and up to 25% in barrel for 6 months: three quarters of which were 2nd or 3rd French oak 300l barrels.
Tasting notes
Exceptional Chinon with a real old-vine heart, incredible purity, a beautiful fine frame and exactly the right amount of 'elbow'.
Food match
Something ever so slightly edgy is needed here, gamey flavours or something nice and rich like a braised ox-cheek pie.
