The house of Lallier specialises in producing champagnes by sourcing exclusively from vineyards officially classified Grand Cru and Premier Cru. The Pinot Noir is sourced from the Grand Cru Aÿ and the Chardonnay from the Cramant in the Côte de Blancs.The provenance of the grapes enables a low dosage to express the purity and the richness of these terroirs. Using approximately 2/3 Pinot Noir and 1/3 Chardonnay wine, the bottles are matured on their lees in chalk cellars for five years. Dosage is less than 6g/l.
Made from two thirds Pinot Noir and one third Chardonnay, this displays inviting aromas of baked apples and peaches weaved with buttery brioche. Rich mouth-feel with fantastic acidity and trademark Lallier vinosity. Excellent, clean, crisp and long finish.
As with most Champagnes, this is usually enjoyed as an aperitif or as a celebratory wine. However, a wine of this standard will also match brilliantly with a wide range of dishes including gravadlax. terrine, saffron flavoured dishes.
