Production
Syrah grapes are hand picked 50/50 from the south oriented Lieux Dits of Méal and Torras et les Garennes (formerly Les Signeaux). They are fermented in concrete vats using gentle extraction methods, followed by a hot post-fermentation maceration and then malactic fermentation in barrels. The wines are aged for 18 months in 228L french oak barrels of varying ages - 20% in new barrels, 35% in two year old barrels and 45% in five year old barrels.
Tasting notes
A subtle nose of candied fruits marked by notes of dried meat and black pepper is bolstered by rich blackberry and blackcurrant flavours. The palate is full-bodied yet with an elegant acidity and a long, lingering finish.
Food match
Will naturally pair well with stewed or roasted meats but also a variety of hard, strong cheeses.
