Production
Produced from wonderfully ripened grapes from the sun-drenched vineyards of the Cape Winelands, these richly fruity blends are a perfect accompaniment to a host of foods. The Winelands benefit from being bordered by two oceans – the Indian to the south and the Atlantic to the west. Fauna and flora dominate the landscape as the rich, fertile soils and warm climate make it the perfect place for the vines to flourish. All grape varieties come from vineyards in the Malmesbury and Stellenbosch areas. The Shiraz grapes are cultivated on Malmesbury Shale, which are dense and clay-like making them excellent for water retention. The Cabernet Sauvignon grapes are grown on granite soils and the Merlot grapes on deep, red soils, also mainly of granitic origin. The Merlot and Shiraz grapes were harvested from mid-end February whereas the Cabernet Sauvignon grapes were harvested a little later, from mid-March. The wine was pumped over 3 times daily and after fermentation was complete, only the free run juice was used for the blend. 30% of the wine was fermented with oak.
