Profundo simply translates as 'profound'. The wise and legendary Argentinian winemaker, Walter Bressia, wanted to make a wine which went beyond single varietal expression, to create something special and with passion that reflects the terroir of Agrelo and Uco Valley.

Production

A blend of 50% Malbec, 30% Cabernet Sauvignon, 10% Merlot and 10% Syrah. The vineyard is 3,120 feet above sea level. Practices include canopy management, with careful shoot, leaf and cluster fruit removal. The grapes are manually harvested and fermentation took place between 25-27°C. The wine was then aged in French and American oak barrels for 10 months. It can be drunk now, but it has the potential to age for over 5 years.

Tasting notes

There is a finely grained nose of new French oak, gently toasted wood with focused red berry appeal. The palate has real energy, informed by more tightly grained wood structure over fruit notes of summer pudding, cassis with crème fraiche and some subtle dark spice. A hugely engaging expression of the great man's finest sites.

Rack of lamb, vegetable tagine, your finest hard cheese and steak rubbed with Chinese five spice.
