Production
This renowned vineyard site is characterised by blue Devon slate. After careful picking and selection the grapes are fermented in 1000L oak Fuder and stainless steel tanks, both blended later to add complexity. The wine rests for a few months on its fine lees before bottling.
Tasting notes
Classic lime and mineral characters on the nose with floral hints. The palate is complex with notes of candied lemon and lightly honeyed, baked apple characters. Juicy with precise, vivid saline acidity on the finish.
Food match
Roast beef, lobster or warm apricot tarte. Why not a meal of all three!
