2014 Production
Picked in the early morning, then destemmed and lightly pressed. Fermentation takes place naturally in tanks. Bottled by hand and not disgorged. This wine is bottled at a specialist bottling plant that very experienced with managing pet nat bottlings.
Maturation
75% in stainless steel and up to 25% in barrel for 6 months: three quarters of which were 2nd or 3rd French oak 300l barrels.
Tasting notes
Red apples, fresh dough and green strawberries on the noise with a tight creamy palate.
