Production
Planted by owner Maria Sole Giannelli's grandfather in 1995, this wine comes from a mix of clay, sand, and lime soils, which adds complexity and depth to the wine. Maria Sole employs the same natural vinification and gentle extraction here as she does with her Sangiovese, but the darker-fruited, grippier, spicier character of the Mondeuse shines through beautifully. The vinification process takes place in cement tanks with a 7-day maceration, allowing the grapes to fully express their character. This wine is then aged for a further 18 months in cement vats and 3 months in bottle, preserving its natural flavours and creating a smooth and well balanced final product. A true testament to her family's dedication to producing high-quality wines.
