Production
Adobe is a line of organic reserve wine that reflect the highest quality of the vineyards and a deep respect for the environment and its workers. Everything used to make this organic wine is of natural origin. The grapes are hand picked when the fruit has reached its optimal degree of ripeness. Fermentation takes place with selected yeasts in stainless steel tanks. The temperature is carefully managed to remain cool (around 15ºC) without pumpovers and with delicate lees stirring in order to reach the desired results. Finally, the wine is fined with bentonite and cold-stabilized before bottling to prevent tartaric precipitations in the bottle.
Tasting notes
Fresh bright and aromatic with aromas of honeysuckle and jasmine. It has a palate that includes white peach in both skin and texture, with notes of white leaf tea and fresh apricot fruit. Ultimately a hugely appealing varietal Viognier.
Food match
Carbonara and any creamy sauce dishes. Broccoli quiche. Grilled fish cooked in olive oil and lemon.
