Production
Adobe is a line of organic reserve wines that reflect the highest quality of the vineyards and a deep respect for the environment and its workers. Everything used to make this organic wine is of natural origin. Fermentation takes place in stainless steel tanks. The process is carefully managed to maintain temperatures at 15º–17ºC (59º–63º), with gentle aeration and delicate lees stirring to reach the desired results. The wine was fined with bentonite and cold-stabilized before bottling to prevent tartaric precipitations in the bottle.
Tasting notes
The nose is immediately suggestive of jasmine, lychee, and honey notes, over a palate rich with citrus peel, lemongrass, apricot and mandarin orange. Classically varietal Gewürztraminer filled with new world joy.
Food match
It is excellent paired with sushi, sashimi and ginger to offset the wasabi heat. Also great with Thai dishes, particularly dry fried curries with prawn.
