Production
Boutinot have worked with these selected growers from the Languedoc for a number of years. When harvesting the grapes for rosé the timing had to be carefully judged to allow the grapes to ripen fully, while still maintaining their fresh, zippy profile necessary for a rosé wine. Early-morning harvesting (or "the very end of the night" as winemaker Guillaume puts it), gentle handling in the winery, cool temperature controlled vinification in stainless steel gave us a delicate colour and fresh, soft berry flavours, while blocking maloctic fermentation maintains pleasant levels of acidity.
Tasting notes
Pretty pink and medium bodied with a surprising texture. A balance of tangy strawberry, juicy raspberry and spice with a dry finish.
Food match
Medium bodied rosé with good mouthfeel, perfect for a BBQ or pizza, or simply enjoying al-fresco on a sunny day.
