The Peacock Wild Ferment range is named after the brightly plumed birds conspicuous in and around Waterkloof's WWF Biodiversity Champion farm... and if you are lucky you might just spot the albino Peacock from which the label gets its inspiration. This is a collection of refined wines, crafted from small vineyard parcels in coastal Stellenbosch, which are carefully selected by Nadia Langenegger and enriched with grapes from Waterkloof. As the name suggests, the whole range are fermented spontaneously with wild yeast.
